Pumpkin Spice It!

The season of sharing is upon us, so we’re sharing a Las Olas cocktail recipe that’ll kickstart your holiday. Start with the classic margarita, then upgrade with spiced pumpkin puree. Fresh. Pure. Tasty.

The Perfect Pumpkin Margarita
Serves 6-8 people (or at my house, an individual serving)

3 cups tequila (We like Jimador or Centenario)
1 1/2 cups Cointreau orange liquor or triple sec
1 1/2 cups fresh squeezed lime juice (10 limes)
1 cup pumpkin puree (recipe below)
8 cups crushed ice
2 tablespoons coarse sea salt
2 tablespoons of Tajine*
6 lime wheels

*Tajin is a spicy seasoning salt that can be found in Mexican markets. If not available, salting the rim with sea salt works fine.

Pumpkin Puree
1 cup of pumpkin puree (make your own or use canned organic, if possible)
1/2 cup brown sugar
1 tablespoon cinnamon
1 pinch nutmeg

Add pumpkin spice ingredients in a saucepan over low heat; whisk together until smooth. Simmer for 20 minutes, stirring occasionally. Remove from heat and let cool.

Combine tequila, triple sec, and lime juice in large pitcher and stir. Add pumpkin puree and crushed ice and serve in sea salt rimmed glasses (see below).

Glass preparation
Place sea salt/Tajine on a saucer. Moisten rim of six tumblers with a lime wedge. Holding each glass upside down, twist rim into sea salt. Pour pumpkin margarita concoction with ice into your salt rimmed glasses. Garnish with lime wheels. Sip and talk amongst your elves. Oh wait, that’s Christmas.
